Deluxe Cheese & Pickle Toastie

This produces the gooiest, cheesiest most delicious cheese & pickle toastie. Enjoy!


INGREDIENTS

  • 4 slices of bread

  • 50 grams butter (25g for frying and 25g for buttering)

  • 2 Tbsp. mayonnaise

  • McClure’s Bread & Butter pickles to taste

  • 200 grams tasty cheddar cheese – supermarket grated is fine

  • 55g brie – rind removed

  • 2 Tbsp. dry white wine (or sauvignon blanc)

  • 1-2 Tbsp. finely minced onion

  • 2 Tbsp. chopped parsley

  • 1 cup extra grated Gruyere or Swiss cheese (optional)

METHOD 

  1. Secret cheese crumb: In a food processor whizz the grated tasty cheese, brie, wine, onion and parsley. Set aside. Note you can store these leftovers in a sealed container – will keep for up to a week.

  2. Take 25g softened butter and butter both sides of each slice of bread.

  3. Lather two slices of bread with the mayo.

  4. Top each with a generous sprinkling of my secret cheese crumb recipe.

  5. Top with pickles and sprinkle with more cheese crumb or extra grated Gruyere or Swiss cheese (optional).

  6. Top with bread.

  7. Heat remaining butter in pan and fry both sides of each sandwich till golden brown.

  8. Remove sandwich from pan and serve with extra pickles!
